    Design My Night Says…

    Nine Lives is a new zero-waste bar and restaurant based in an old Victorian basement in Bermondsey. The concept behind this new spot is simple; fresh flavours, limited waste and recycled ingredients where possible.

    The news restaurant is the pet project of the team behind Sweet&Chilli. With the zero-waste theme proving to be popular among mixologists and chefs, many of London's newest spots use this as a core principle. The team at Nine Lives take things one step further. The bar will feature a variety of 'Loop' cocktails, all made using ingredients from the kitchen that would otherwise have been put in the bin. For example, after each lemon has been squeezed, the pith is redistilled to draw all the remaining essential oils, which are in turn used to create hand soap and flavoursome liqueurs for the bar.

    Waste nothing, make cocktails - that’s the ethos behind Sweet&Chilli’s latest venture, a new bar called Nine Lives based in London Bridge.

    Operating out of a Victorian basement in Bermondsey, their “total passion project” will be dishing up cocktails and food that reuses ingredients otherwise be destined for the bin. It's a trend we’re seeing again and again lately, from WASTed to Rubies in the Rubble and Plot’s one-off salvaged dinner. And there's also Trash Tiki at the Curtain.
