The news restaurant is the pet project of the team behind Sweet&Chilli. With the zero-waste theme proving to be popular among mixologists and chefs, many of London's newest spots use this as a core principle. The team at Nine Lives take things one step further. The bar will feature a variety of 'Loop' cocktails, all made using ingredients from the kitchen that would otherwise have been put in the bin. For example, after each lemon has been squeezed, the pith is redistilled to draw all the remaining essential oils, which are in turn used to create hand soap and flavoursome liqueurs for the bar.
