    There’s a big emphasis on seasonal produce here which is used to make house sodas and tinctures and it’s the very pick of the crop, delivered daily from Richard’s own garden and farm, Virginia Park Lodge. Another biggie behind the bar is Whiskey (Irish, of course), with cocktails like The Professional Stalker combining Powers John’s Lane 12-year-old Irish Whiskey, Pierre Ferrand 1840 Cognac, fig, allspice and Jerry Thomas Decanter Bitters – a dark and moody little number.

    The Nudge Says…

    The Dead Rabbit is a cocktail bar in New York. It’s where people go when they really want to let their hare down. After all, it’s regarded as one of the best bars in the world (World 50 Best Bars No.1, Best Bar at Tales of the Cocktail, etc.) – so it’s no surprise that Richard Corrigan has bussed in one of their head mixologists, Gregory Buda, to run his new Mayfair drinkery, Dickie’s Bar.

    Farm to glass: what the Dickie’s does that mean? At the new bar within upscale Mayfair restaurant Corrigan’s it means gorgeous cocktails filled with ingredients ferried across daily from Irish chef Richard Corrigan’s County Cavan farm. Each drink contains a signature ingredient, with sketches depicting the joys of country life weaved through the menu. Of course, seasonality is reflected too, with a separate pull-out drinks list. So far, so bucolic.
