This is not, I concluded, a place where myriad sweating, panicking chefs are trying to get everything just-so. It is more like a lovely country pub where the locals will come whatever happens, and eat what they’re given.
The fit reveals a lot of the old hospital building and divides the space up intimately. The food is Modern British with European influences from Diego Cardoso, who before this was at Angela Hartnett’s wonderful Murano. But what’s best is the building’s maintenance of an eery religious feel – it’s a provocative setting for relaxed dining, which by default makes P&F an absolute must-see.
Percy & Founders is an all-day bar-restaurant encompassing a light, wood-panelled dining room (with views of the ornate old hospital chapel), and a cosy-chaired bar where nurses look down from a huge painting as you quaff Champagne or sip morning coffee.
