Fitz’s is hosting its very own alternative Burns Night event: Feu de Fitz’s: An Evening of Fire & Flavour.

The evening takes inspiration not from a Scottish poet, but a French physician - Louis Camille Maillard, on the anniversary of his 141st birthday. Maillard discovered the ‘reaction’ that occurs when flame creates complex flavour through various methods of cooking, a technique that has informed the thinking of chefs and bartenders for over a century.
For one night only, the Fitz’s team, in association with Speciality Brands, and chefs at Kimpton Fitzroy London have joined forces to create a menu of cocktails and bar snacks inspired by the ‘Maillard reaction’. Guests can enjoy next to one of the bar’s two crackling open fires, with live music from the aptly named New Orleans jazz band, Dom Pipkin’s Smokin’ Boogie.
