Drink This: Trailer Happiness’s Pineapple Daiquiri

An instant classic. Beware imitations. Ingredients: Plantation Pineapple Rum, Lime, Lemon & Sugar.

The Daiquiri has long been a staple classic for any rum lover, and its simple combination of rum, lime and sugar is arguably Cuba’s most successful export. Like anything popular, from songs to dress styles, the Daiquiri has spawned a generation of rifts and twists, from Hemingway’s special with maraschino liqueur to fruity, frozen classics. But none of them come close to this tasty number from Portobello Road’s Trailer Happiness.

“True to a classic Daiquiri it is just rum, citrus and sugar but using Plantation Pineapple rum and adding in the milder lemon juice” says General Manager Matt Roberts, “so it’s still a sharp drink but by increasing the sweetness gently the pineapple flavour really jumps out of the glass.”

Trailer’s recipe was perfected by the inimitable Andrea Montague, and she’s definitely cracked the balance to this drink. As to the Plantation Pineapple rum, this tasty drop was created by Plantation's Alexandre Gabriel as a tribute to Reverend Stiggins, a character in Charles Dickens' Pickwick Papers.
