Atelier PIP Education Programme Launches

Drinks gurus Zoe Burgess and Robin Kolek have joined forces to run their very own education programme for bartenders. With a wealth of behind-the-scenes knowledge in some of the best bars in the world, as well as consultancy work, this duo are brilliantly placed to deliver an adaptable mentorship programme that covers the aspects that make truly great hospitality staff...

With cocktail creation for the likes of The Standard (London), Dinner by Heston (Melbourne), Tippling Club (Singapore) and Bar Convent (Berlin), plus many more under their belts, Zoe and Robin know a thing or too about making good drinks - from initial concept to creating them flawlessly on mass and even the delivery to the customers, they know that it takes much more than just what's in the glass to be memorable.

So as a way to improve the standards in the hospitality industry for the better, Atelier PIP was born. No-one is off limits, this is genuinely for everybody - whether you're a dive bar or a Michelin starred restaurant, the idea is to help you make your offering as unique and special as it can be and empower bartenders to think for themselves.

Broken down into three sections, which each last two days and can either be attended individually or as a single six day intensive course...

STAGE 1: BAR SERVICE AND CLASSIC COCKTAILS
This course provides key knowledge on what great service is and best working practices for the bar environment. Starting from how to prepare and serve cocktails in their classic format, you’ll leave stage one of the Atelier PIP education program with added confidence in the bar environment.

STAGE 2: EVOLVING CLASSIC COCKTAILS TO CREATE SOMETHING UNIQUE
At this stage you'll gain the knowledge to look at classic cocktails and their structures in more detail so that you may start the process of evolving these drinks into something more unique. The techniques covered in this course do not require the use of a research or preparation kitchen, meaning they are accessible to all.

STAGE 3: BESPOKE COCKTAIL CREATION AND INGREDIENT PRODUCTION
Stage three provides key knowledge on the thought process and approach for bespoke menu creation, providing you with the skills to ‘turn the volume up’ and evolve these classic cocktails into something innovative and original. We will also advise on the best practices for setting up and managing bespoke ingredient production and the equipment involved.

What else you need to know...
Classes have a maximum of six attendees, meaning direct contact with Zoe and Robin. You’ll be learning in a working cocktail bar and development kitchen. The course runs from 10am to 5pm and takes place at 538 Kingsland Rd, E8 4AH.
