As co-founder of The Providores, chef Anna Hansen has form in creating enticing fusion dishes that make the most of unusual ingredients sourced from around the globe. The signature dish of sugar-cured prawn omelette with chilli, coriander and spring onion is still a winner; and blackcurrant and liquorice sorbet was a revelation in intense flavour matching...White-aproned staff are among the nicest we’ve encountered in London: both deeply professional and utterly charming.
I once claimed there was nothing wrong with fusion cooking… as long as Peter Gordon was doing it. There is no doubt that Hansen deserves to be co-opted into that thought. She can cook...None of this is everyday food. It is too restless for that, too knowing. But in a town like London, which is nothing like the country in which it sits, it makes a twisted kind of sense.
